I mentioned here that I loved chocolate desserts and this is probably my favourite. My mum found this recipe when we lived in Norway back in the 90s and we've never found another chocolate cake that tastes nicer than this or one that is as easy to do! This cake is moist, chocolatey and just all around delicious.
I make this cake several times a year, it's especially great for parties because it's so easy to quickly make and everyone from little kids to adults love this!
Sponge Ingredients
2 cups granulated sugar
1 3/4 cups all purpose flour
3/4 cups Hersheys cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract (optional but recommended!)

1 cup of boiling water
Method
Pre-heat the oven to 360 degrees F (180 degrees C). Add everything above the little asterisks (*) together and mix until it's all combined. Then add the cup of boiling water while mixing at a slow speed. Pour into greased and lined cake tins, 9" are perfect. Cook for 35 minutes
Icing Ingredients (recipe is doubled!)
1 cup melted butter
1 1/3 cup Hersheys cocoa
6 cups icing sugar
2/3 cup milk
2 tsp vanilla extract (optional but recommended!)
Method
Melt the butter then mix it all together!
Note! If you buy loads of Kit Kats you can place them standing up around the outside of the cake and pour smarties/M&Ms onto the top of the cake to create an amazing looking cake! This hides any icing defects if you aren't very good at icing!
