I only discovered lemon bars this year through a friend of a friend who made them for a school fair. Since then I've made them about 10 times and just made a batch about 10 minutes ago. They are to die for. I'm usually a chocolate desert kind of person because when eating desert, why wouldn't you want something chocolate orientated?! But holy-moley, these are delicious.
I love these in the warmer months (which in the Middle East is basically 90% of the year) because they are just so light but dense enough to fill you up with a citrus taste. Love, love, love.
1 cup butter
2 cups plain (all purpose) flour
Method
Preheat the oven at 350 (170 degrees C). Soften the butter and combine with the flour. Mix together until it forms an almost bread-crumb like consistency. Scoop into a 9x13 inch (2-3 inch deep) dish. Pat it into the dish. Cook for 15 minutes.
Ingredients for the lemon part
4 eggs
2 cups sugar
6tbsp plain flour
6tbsp lemon juice
6tbsp lemon rind
Method
Combine everything together in a bowl and mix. It will make quite a grainy, lemon liquid mixture. Then pour on top of the crust as soon as it comes out of the oven. Put it all back in the oven for 30 minutes.
Note: Allow these to cool down before you cut them into bars. Sprinkle them with icing sugar to make them look super cute and detailed!
